Craigellachie Distillery, Scottland, installs new process for mash processing
At Craigellachie Distillery history has just been made with the installation of a new state of the art brewery lautertun, the first of its kind in Scotland. The lautertun has been specially adapted to accommodate the traditional whisky mashing system and is constructed as a combination of mash vessel and lauter tun.
High economic efficiency is guaranteed by
- well thought out construction of the raking machine: zig zag knife arranged in leading and trailing edge and equipped with copper blades set at the gaps. In this way a raking effect is achieved that corresponds to more than three knives per m2,
- turning knives prevent the great extent of layering that is frequently to be found in dry grist lauter tuns,
- a frequency controlled drive unit is responsible for assuring optimum raking speed,
- due to very simplified construction, maintenance operations are greatly reduced,
- high degree of automation with automatic yeast dosing and automatic CIP cleaning steps,
- integrated Botec central process control system.
The Craigellachie Distillery is owned by world renowned distillers, John Dewar & Sons Ltd, based in Glasgow, Scotland, who are part of the Bacardi-Martini Group. Lauded as one of the first whisky companies to sell blended whiskies in branded bottles, Dewar’s are also famous for their pioneering techniques in blending and advertising. winning over 50 medals and awards at competitive tastings, most recently winning double gold at the 2001 San Francisco Wine and Spirits Competition.
